The Bikini Cocktail

Serves 10 servings

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Premix (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Combine every components into a saucepan, bring to a light boil, mixing to dissolve. Next, take off the heat and leave to cool entirely. Decant into a sealable bottle, seal and store in the fridge, it will last for around one month.

To make Cocktail Base: Mix all the liquids into one sizeable container, let it rest for an hour, then strain preferably using muslin, to ensure it's fully clarified.

When ready to serve: Add 85ml from the premix into your cocktail shaker filled with ice, gently stirring lightly for about 60 seconds to chill. Pour to a cold coupe glass or equivalent, garnish with a few cranberries and finish by giving it a quick spritz of the essential oil over the top.
